I love to cook, but I have also encountered many obstacles that make it hard to keep that passion alive. Picky kids who won’t touch seafood, a husband who won’t touch red meat. There are plenty of nights I run out of ideas and just make two separate dinners. Needless to say, this outcome isn’t great.
I know that I’m not the only one who has ever experienced a dinner rut. Same old recipes on repeat, desperate to figure out something new to do with chicken. Well, friends, I decided to help us all out by scouring the internet for the most interesting and refreshing recipes I could find. When selecting these meals, I aimed to include those that appeal to a variety of different diets (vegetarian, vegan, low carb, gluten-free, etc.), as well as those that appeal to my love of ethnic food and exotic flavors (think: Indian curries, African-spiced eggs and Asian-inspired seafood and noodle dishes).
