Screw a vacation. Wanna know my summer dream? Spending the whole day and night eating with Ina Garten on her breezy veranda in the Hamptons. I imagine herbs and warm-weather produce from her garden would make an Insta-worthy appearance, not to mention oversized cosmos and a dreamy roast chicken.

I might not have scored an invite to the Barefoot Contessa’s sprawling estate (yet...), but I have a solution that counts as a close second. Behold: ten of the best Ina Garten summer recipes out there. From strawberry desserts to warm (yes, warm) lobster rolls, the Queen of Chambray has served her fans plenty of seasonal inspo over the years that's equal parts elegant and attainable.

This crimson sipper only requires three ingredients, plus hot water. Lemon Zinger and Red Zinger teas, which both have a tangy, sweet-tart hibiscus base, star here, along with an unexpected sweetener: apple juice.

"We used to make this really easy iced tea at the store—no caffeine and naturally sweetened with apple juice," Garten explained in an Instagram caption. "It’s so refreshing, especially during a heat wave!"

2. Raspberry Royale

Ina may be most famous for her gargantuan, pandemic-era cosmopolitan, but I'm loving this three-ingredient cocktail that's complete with summer raspberries as a garnish. "Pour 1 teaspoon of red raspberry liqueur into each Champagne glass," Garten explained in an Instagram video. "When guests arrive, pop the cork and fill each glass with Champagne."

It seems to be a seasonal play on the kir royale, a French cocktail made with bubbly and blackcurrant liqueur, aka crème de cassis. You can riff on her version further by substituting prosecco, cava or whatever sparkling white (or rosé) is in your fridge for Champagne. 

3. Connecticut-Style Lobster Rolls

If you've never had a Connecticut-style lobster roll, you're in for a serious treat. Personally, I've had both, and the warm one is miles ahead of its cold cousin, IMO.

Garten tends to serve them for the Fourth of July. "It consists of warm lobster that has been sautéed in butter and herbs—you can't go wrong with that!" she wrote in the Instagram caption. "They're also incredibly easy to assemble when you use store-bought, cooked lobster."

4. Grilled New York Strip Steaks

Garten revealed that quality steak is key to her typical Memorial Day menu, which she makes with a dry rub of coffee, chipotle powder and garlic. "The real secret is in the exact method of grilling, so they come out perfectly every time!" she raved in an Instagram video's caption.

Her grilling method comes from Mark Lobel of Lobel’s of New York, a butchery that’s famous for its dry-aged meat. She only heats half the grill with hot coals and leaves the other half empty and cool. Then, she sears the steaks on the hot half for 2 minutes exactly per side (that's also when she sneakily pours a glass of wine for the cook) and finishes them on the cool side with the grill closed—8 minutes for a rare steak or 10 minutes for medium.

5. Crunchy Iceberg Salad with Creamy Blue Cheese Dressing

Also a regular on the Contessa's Memorial Day menu, this Ina Garten summer recipe is a play on an American classic, the wedge salad. "It's SO good that you'll want to make it all the time!" Garten claims in an Instagram post.

It stars likely suspects like celery and iceberg lettuce, along with fun additions like radishes, scallions and quality Roquefort blue cheese, which is also the main component of the tangy, vinegary dressing. Fun fact: She also finishes the salad with fleur de sel, one of her favorite types of salt. (She's partial to the brand Le Saunier de Camargue.)

"Another fabulous, surprisingly simple summer recipe that I love comes from my late friend Jean Halberstam," Garten wrote in an Instagram video caption. "Jean's husband used to call this summer garden pasta a 'three-bowler.'"

The time commitment is long because the recipe calls for marinating tomatoes, garlic, fresh basil and a few pantry staples in a bowl for a few hours. So yes, it requires a bit of patience and forethought...but I promise it's worth the wait.

7. Green Spaghetti Carbonara
