Reese Witherspoon’s been known for introducing the masses to the next it book, but it turns out she’s also ahead of the game when it comes to food trends. Fibermaxxing—aka getting in the recommended 25 grams for women, 38 grams for men each day—may be all over Instagram today, but she’s been (perhaps unintentionally) advocating fiber-rich meals since 2021.
You see, back in the late-stage pandemic era when we were all pretending to be Ina Garten on social media, Witherspoon shared a lentil soup recipe, and it really took off. The slow cooker concoction called for roughly 11 ingredients, and it didn’t provide measurements or directions, but that didn’t stop people from guesstimating, riffing and making their own versions, just because it sounded so hearty, healthy-ish and simple. (On the fiber front, the lentils alone provide 31 grams, along with a solid amount of protein, iron and vitamin B6.)
Admittedly, I was equally intrigued, so after seeing our former food editor’s approximation of the recipe, as well as others online, I decided to try it myself. It turns out, it’s the cold-weather staple I never knew I needed—and I bet you didn’t either (until now).
